July 16: sungold tomato-ramp focaccia

we saw some wood-fired focaccia on a trip a few years back. like, an overwhelmingly bubbly, overproofed thing. surely jammed up w commercial yeast, we thought. surely drowning in water, we thought. surely made with dead flour, we thought. 

and then we tasted it. and we were proven wrong. and inspired. so we got to work. ... what came next were our legendary pizza clouds. which still don't quite have a comfortable home on our menu. 

but we'd like to share this beautiful beast of a bread w y'all. for summertime cc and cukes sandwiches. or open-faced tomato toasts. or for simple ripping. just in time.
